{"id":4027,"date":"2014-06-03T08:37:01","date_gmt":"2014-06-03T06:37:01","guid":{"rendered":"https:\/\/www.estudiahosteleria.com\/blog\/?p=4027"},"modified":"2017-10-25T10:46:30","modified_gmt":"2017-10-25T08:46:30","slug":"tarta-sacher-receta-de-samantha-vallejo-najera","status":"publish","type":"post","link":"https:\/\/www.estudiahosteleria.com\/blog\/pasteleria-reposteria\/tarta-sacher-receta-de-samantha-vallejo-najera","title":{"rendered":"Tarta Sacher, receta por Samantha Vallejo N\u00e1jera"},"content":{"rendered":"<p style=\"text-align: justify;\">Hoy tenemos d\u00eda dulce, as\u00ed que quer\u00edamos compartir con vosotros la receta de la Tarta Sacher de Samantha Vallejo, propietaria de uno de los c\u00e1terings m\u00e1s importantes en Espa\u00f1a.<\/p>\n<p><strong>INGREDIENTES<\/strong><\/p>\n<p><strong>Para la masa<\/strong><\/p>\n<ul>\n<li>175 gr de az\u00facar<\/li>\n<li>175 gr de mantequilla<\/li>\n<li>7 huevos<\/li>\n<li>175 gr de chocolate amargo<\/li>\n<li>50 gr de harina de almendras<\/li>\n<li>100 gr de harina<\/li>\n<li>Mermelada de albaricoque<\/li>\n<\/ul>\n<p><strong>Para la cobertura<\/strong><\/p>\n<ul>\n<li>300 gr de chocolate de cobertura<\/li>\n<li>100g cucharadas de mantequilla<\/li>\n<li>100ml cucharadas de nata l\u00edquida<\/li>\n<li>Mantequilla y harina para el molde<\/li>\n<\/ul>\n<p><strong>Para el alm\u00edbar:<\/strong><\/p>\n<ul>\n<li>150gr de az\u00facar<\/li>\n<li>100ml de agua mineral<\/li>\n<\/ul>\n<p><strong>ELABORACI\u00d3N<\/strong><\/p>\n<div>\n<ul>\n<li>En un bol, y con una batidora el\u00e9ctrica de varillas, bate la mantequilla con el az\u00facar.<\/li>\n<li>Incorpora una a una las yemas de los huevos sin dejar de batir. A continuaci\u00f3n funde el chocolate, d\u00e9jalo templar e incorp\u00f3ralo.<\/li>\n<li>Mezcla la harina con las almendras y agr\u00e9galas a la crema anterior con movimientos envolventes. Utiliza una varilla manual.<\/li>\n<li>Incorpora las claras a punto de nieve suavemente.<\/li>\n<li>Unta un molde (de base desmontable) con mantequilla.<\/li>\n<li>Vierte la mezcla y hornea a 185\u00baC durante 10 minutos.<\/li>\n<li>Baja la temperatura a 175\u00baC y hornea durante 30 minutos m\u00e1s.<\/li>\n<li>Para elaborar el alm\u00edbar mezclar el az\u00facar y el agua. Poner al fuego. Fundir.<\/li>\n<li>Deja templar y desmolda. A continuaci\u00f3n corta la tarta en dos capas, con la parte jugosa mirando hacia arriba \u00a0y con un pincel empapa con el alm\u00edbar, es importante que no haya un exceso de almibar para que no quede muy dulce, pero tampoco en defecto para que no quede seco. Despu\u00e9s y extiende la mermelada de fruta en la inferior. T\u00e1pala con la otra capa de bizcocho.<\/li>\n<li>Funde el chocolate, agrega la mantequilla, disu\u00e9lvela y agrega nata l\u00edquida.
